Homemade Salmon Poke Bowl

- 4 oz smoked salmon cut into pieces
- 1 cucumber chopped
- 1 avocado chopped
- 1 cup cooked rice
- 1 sheet nori seaweed cut into small pieces, optional
Spicy Poke Sauce
- 2 tbsp mayo
- 1 tsp sriracha
Divide rice between 2 bowls.
Top rice with cucumber pieces, avocado pieces and smoked salmon slices.
In a cup mix mayo and sriracha to make the sauce. Add poke sauce on top of poke bowl.
Sprinkle poke bowl with dried seaweed (if using).
