Turkey Cauliflower Fried Rice

- 1 lb ground turkey
- 12 oz frozen riced cauliflower thawed
- 12 oz frozen vegetables thawed
- 2 tbsp olive oil
- 2 eggs
- 2 tbsp soy sauce
- 2 garlic cloves minced
- salt and pepper to taste
Heat 1 tbsp olive oil in a non-stick frying pan over medium-high heat. Add ground turkey and cook, stirring occasionally, for 5 minutes (or until cooked through).
Add another 1 tbsp of oil, minced garlic, soy sauce, riced cauliflower and vegetables and mix until combined. Cook, stirring occasionally, for 5 minutes, or until the vegetables are cooked through.
Add eggs and mix until combined with the rest of ingredients. Cook, stirring, for 2 minutes. Add salt and pepper to taste.
