Chocolate Avocado Muffins
These chocolate avocado muffins are fudgy, soft, chocolatey and absolutely delicious! The perfect breakfast or dessert, you won't get enough of these amazing muffins!

- 1 medium avocado ripe
- 1 egg
- 1 egg yolk
- 1/4 cup granulated sugar
- 3 tbsp cacao powder
- 3 tbsp white flour
- 3/4 tsp baking soda
- 1/2 tsp lime juice
- 1 tsp vanilla
- 1/3 cup semi-sweet chocolate chips
Preheat the oven to 350 and line 4 muffin tins with cupcake liners.
In a large bowl, mash the avocado. The less chunky, the better.
Mix in the eggs.
Add the sugar, cacao powder, flour, and baking soda and mix.
Add the vanilla and the lime juice and mix.
Add the chocolate chips and mix until well combined.
Distribute the batter into the 4 muffin tins. You want them to be about 3/4 full.
Bake for 20-25 minutes, or until toothpick comes out clean .
