Sweet Potato Avocado Egg Meal Prep
This sweet potato avocado egg meal prep is so colorful, healthy and delicious! Orange sweet potatoes, green avoado, and yellow eggs make a perfect lunch combo!
- 4 hard boiled eggs cut in half
- 2 sweet potatoes
- 1 cup guacamole
- 2 cups lettuce
- salad dressing
- salt & pepper to taste
Make roasted sweet potatoes by following my roasted sweet potatoes recipe.
Divide the lettuce leaves between 4 meal prep containers.
Cut the avocadoes into slices and toss in lime juice.
Add avocado slices, eggs, and roasted sweet potatoes on top of lettuce. Your meal prep lunches are ready!
Before serving, add salt, pepper, and salad dressing to taste.
