Turkey Cauliflower Fried Rice

This turkey cauliflower fried rice is so easy to make, healthy and delicious! This is a perfect low-carb and gluten-free one-pan dinner!

Ingredients
  

  • 1 lb ground turkey
  • 12 oz frozen riced cauliflower thawed
  • 12 oz frozen vegetables thawed
  • 2 tbsp olive oil
  • 2 eggs
  • 2 tbsp soy sauce
  • 2 garlic cloves minced
  • salt and pepper to taste

Method
 

  1. Heat 1 tbsp olive oil in a non-stick frying pan over medium-high heat. Add ground turkey and cook, stirring occasionally, for 5 minutes (or until cooked through).
  2. Add another 1 tbsp of oil, minced garlic, soy sauce, riced cauliflower and vegetables and mix until combined. Cook, stirring occasionally, for 5 minutes, or until the vegetables are cooked through.
  3. Add eggs and mix until combined with the rest of ingredients. Cook, stirring, for 2 minutes. Add salt and pepper to taste.
