Method
- Heat 1 tbsp olive oil in a non-stick frying pan over medium-high heat. Add ground turkey and cook, stirring occasionally, for 5 minutes (or until cooked through).
- Add another 1 tbsp of oil, minced garlic, soy sauce, riced cauliflower and vegetables and mix until combined. Cook, stirring occasionally, for 5 minutes, or until the vegetables are cooked through.
- Add eggs and mix until combined with the rest of ingredients. Cook, stirring, for 2 minutes. Add salt and pepper to taste.
