As a breakfast hater, I’ve always struggled with finding a breakfast both light, healthy, fresh, and most importantly delicious! Sweetened only by honey and berries, and filled with essential nutrients from the chia and pumpkin seeds, this overnight oatmeal is the healthiest, most refreshing way to start your day!

Filled with oats, honey, chia and pumpkin seeds at the bottom, you are instantly reminded of a refreshingly sweet dessert. The layers of different fruits add color into your breakfast, and their natural sweetness adds flavor into the oatmeal. By adding frozen fruit for the bottom layer, as it thaws some of the juice from the fruit absorbs into the oatmeal.  This leaves the oatmeal with a light berry flavor. When adding frozen berries, they completely thaw overnight, leaving your oatmeal extra cool and refreshing. I typically do a small layer of frozen berries at the bottom to flavor the oatmeal, then layer with fresh tropical fruits, such as pineapple, blueberries, and strawberries. The fresh fruit add extra flavor, and the frozen ones make the oatmeal extra refreshing. I do shy away from sticky and slimy fruits such as mango and kiwi, as they can make the oatmeal feel “slimy”, which is unappetizing. The combination of berries, fruit, seeds, honey and oats always leave me satisfied, without being too heavy.

Growing up, I’ve always hated breakfast. Wanting to eat something in the mornings, I’d try countless things, but they’d all leave me unappetized, discussed, and simply nauseous. After doing lots of research I came across a recipe for overnight oats. After trying it, I was satisfied with the taste, however it still left me feeling nauseous, as it was much too heavy. After months of perfecting the recipe to be the ultimate breakfast for breakfast-haters, I found the perfect mix of ingredients to create a healthy, light and refreshing, yet still delicious! It’s easy to eat, even in the earliest of mornings, when you don’t have an appetite, yet when you are done eating it, you are energized for the day! It is the ideal breakfast for any breakfast hater!

One benefit of having the overnight oats for breakfast is it’s outstanding health effects! The chia seeds in the oatmeal are full of antioxidants, calcium, fiber, iron, and other important nutrients. In addition, it contains lots of protein, which will fill you up for the day. The pumpkin seeds are filled with protein, good fats, and lots of potassium, to keep you full throughout the day. The fruit and berries contain essential nutrients and vitamins that are needed throughout the day, and the oat contain complex carbs, which will give you energy, without the crash. From the chia seeds to the berries, this mixture is ideal for a health filling but light breakfast.

This recipe is so simple to make the night before! I typically am very busy in the evenings, and making this breakfast only takes me five minutes! In addition, I have tons more energy at night than morning, so making breakfast the night before not only allows me more sleep, but saves time and energy. You simply mix together the seeds, oats, and honey, and then mix in the water, until the oatmeal is wet, without there being excess water on the bottom. Finally you simply layer the jar with fruits, and pop the jar in the fridge overnight and your done! It’s a perfect breakfast for anyone seeking a light, healthy breakfast!

These overnight oats are the best and most delicious way to start off your morning! Packed with nutrients and vitamins from the seeds and berries, this oatmeal will leave you feeling refreshed, energized, healthy and ready to start your day!

Ingredients
  

  • 1/3 cup instant oats
  • 1 tsp chia seeds
  • 1 tbsp pumpkin seeds
  • 1 tbsp honey
  • 1/8 cup water
  • 1 cup berries & fruit fresh or frozen

Instructions
 

  • In a mason jar, mix together the oats, chia seeds, pumpkin seeds, and honey, 
    chia pumpkin seeds and oats
  • Add in water until the mixture is wet, without any excess water at the bottom of the jar. 
  • Layer the mason jar with berries and fruit, until filled to the top.
