Sweet Potato Avocado Egg Meal Prep
Ingredients
- 4 hard boiled eggs cut in half
- 2 sweet potatoes
- 1 cup guacamole
- 2 cups lettuce
- salad dressing
- salt & pepper to taste
Instructions
- Make roasted sweet potatoes by following my roasted sweet potatoes recipe.
- Divide the lettuce leaves between 4 meal prep containers.
- Cut the avocadoes into slices and toss in lime juice.
- Add avocado slices, eggs, and roasted sweet potatoes on top of lettuce. Your meal prep lunches are ready!
- Before serving, add salt, pepper, and salad dressing to taste.
