Chocolate Avocado Muffins
Ingredients
- 1 medium avocado ripe
- 1 egg
- 1 egg yolk
- 1/4 cup granulated sugar
- 3 tbsp cacao powder
- 3 tbsp white flour
- 3/4 tsp baking soda
- 1/2 tsp lime juice
- 1 tsp vanilla
- 1/3 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350 and line 4 muffin tins with cupcake liners.
- In a large bowl, mash the avocado. The less chunky, the better.
- Mix in the eggs.
- Add the sugar, cacao powder, flour, and baking soda and mix.
- Add the vanilla and the lime juice and mix.
- Add the chocolate chips and mix until well combined.
- Distribute the batter into the 4 muffin tins. You want them to be about 3/4 full.
- Bake for 20-25 minutes, or until toothpick comes out clean .
